Daylite Mail for iPhone/iPad doesn't support Exchange email addresses. If you use an Exchange email address, please speak to your Exchange administrator about the IMAP settings for your server. You can use Exchange via the IMAP protocol.

Yes, email signatures are supported in Daylite Mail.
How do I determine who can read my emails in Daylite?
If you have set permissions in the Daylite settings on your Mac you can determine who can view the email once you link it with Daylite Mail.
